17 Cucumbers

I have picked 17 cucumbers in the last 5 days.
We simply cannot eat that many.
I have been handing them out left and right. hmmm....
I wish I could pay my electrical bill in cucumber slices.

I did find a recipe that notes you can freeze cucumbers


CUCUMBERS TO EAT AT ONCE OR FREEZE

7 c. sliced cucumbers
1 c. sliced onion
1 c. diced green pepper
2 c. sugar
1 c. white vinegar
1/2 tsp. salt
1 tsp. celery seed
Combine cucumbers, onion, and green pepper. Mix remaining ingredients until sugar is dissolved. Pour over cucumbers, cover, and refrigerate or freeze.

Has anyone ever ate a frozen cucumber? It just seemed unnatural to freeze cucumbers.
